I like a salty snack in the evening hours, while I read classic literature watch So You Think You Can Dance. Unfortunately, most salty snacks come with a few extra calories I don’t need, not to mention transfats, preservatives, and bleached flour. Enter the artichoke – which always seemed like a daunting treat to make. However, I have found that if I prepare this while I’m making our family dinner and pop it in the crockpot around 5pm, I have a perfect artichoke waiting for me when I ready to assume the recline position once the kids are asleep. And best yet: a large artichoke has approximately 80 calories!
Ingredients:
1 large artichoke, tough leaves removed
1/2 cup lemon juice
1 diced shallot (or sub celery)
1 garlic clove
1 tbsp salt
Cut the stalk off the artichoke and place in the bottom of a small crockpot, topside up. Add other ingredients, then fill the crockpot with water to the top. Place lid on and set on high for 4-5 hours.

OMG! What a great idea. I, too, am an after dinner-kid in bed- savory snack kinda girl, but my BUTT… I love artichokes and I’m trying out your recipe this weekend.
I found your blog through a friend’s friend’s blog. She adopted from Haiti, We’ve adopted from Haiti, and you are adopting from Haiti–how cool is that?

Ok, so I want you to know that I purposely searched your blog because I remembered that you had a recipe for Artichokes. I was craving them big time and picked some up at the store this week and decided to do it your way! ๐ Your blog is sometimes my personal reference guide. P.S. Did I tell you I did well on my paper about you and was chosen as commencement speaker! ๐ YAY! ๐
