family friendly gluten-free and diary-free meal planning: breakfast

After I shared about Jafta and I giving up gluten and dairy I had a lot of requests to share what GFDF foods we eat.  It’s funny, because since we’ve been eating this way for about six months, it seems really easy and basic now . . . but I remember it being really overwhelming in the beginning.  I thought I would break it down by our meals, and start with some ideas for breakfast foods. family friendly gluten-free dairy-free GFDF breakfast options Most mornings we are running out the door, so we do a lot of what we call “cookie-style” gluten-free waffles. This means the kids eat the waffle with a smear of peanut butter and agave instead of syrup, so they can grab it and eat it in the car on the way to school. We also do a lot of smoothies. On weekends, we eat eggs along with gluten-free toast, or breakfast tacos with corn tortillas. There are many mainstream cereals that are gluten-free, which is nice in a pinch, too.  My preference for breakfast is steel-cut oats, which I like to make in the crockpot.  On occasion, I’ll do a “muesli” style breakfast with soaked oats or quinoa along with almond milk, tart apples and cranberries. Next week, I’ll share some ideas for packing school lunches that are GFDF.  Packed lunch has been my biggest challenge so far, but we’ve figured out a couple options that work well for us.
